Description

Discover how to prepare Pollo Amarillo, a vibrant Peruvian dish made with aji amarillo peppers, tender chicken, and flavorful spices. Perfect for those seeking a unique and delicious taste of Peru!

Ingredients

Scale
  • 4 boneless, skinless chicken breasts or thighs
  • 3 tbsp aji amarillo paste
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 tbsp olive oil
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup diced tomatoes
  • 1/2 cup chicken stock
  • 1 tbsp vinegar (white or apple cider)
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Marinate the Chicken:
In a large bowl, combine aji amarillo paste, minced garlic, cumin, oregano, olive oil, and a pinch of salt. Add the chicken and coat thoroughly. Cover and marinate for at least 1 hour or overnight for deeper flavor.

  2. Cook the Chicken:
Heat a large skillet over medium heat and add 1 tbsp of olive oil. Sear the chicken on both sides until golden brown, about 4-5 minutes per side. Remove and set aside.

  3. Sauté the Vegetables:
In the same skillet, add onions, bell peppers, and diced tomatoes. Cook for 5-7 minutes until softened.

  4. Simmer the Sauce:
Add chicken stock and vinegar to the skillet. Stir to combine, scraping any brown bits from the bottom of the pan. Simmer for 5 minutes.

  5. Combine and Cook:
Return the chicken to the skillet, covering it with the sauce and vegetables. Reduce heat to low, cover, and cook for an additional 10-15 minutes, or until the chicken is fully cooked and tender.

  6. Serve:
Garnish with fresh cilantro and serve hot with rice, potatoes, or a fresh salad.

Notes

  • Substitute chicken breasts with tofu for a vegetarian version.
  • Use less aji amarillo paste if you prefer a milder spice level.
  • Serve with Peruvian aji sauce for an authentic pairing.
