Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 3 tbsp aji amarillo paste
- 2 garlic cloves, minced
- 1 tsp cumin
- 1 tsp oregano
- 2 tbsp olive oil
- 1 medium onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup diced tomatoes
- 1/2 cup chicken stock
- 1 tbsp vinegar (white or apple cider)
- Salt and pepper, to taste
- Fresh cilantro, for garnish

Marinate the Chicken:
In a large bowl, combine aji amarillo paste, minced garlic, cumin, oregano, olive oil, and a pinch of salt. Add the chicken and coat thoroughly. Cover and marinate for at least 1 hour or overnight for deeper flavor. -
Cook the Chicken:
Heat a large skillet over medium heat and add 1 tbsp of olive oil. Sear the chicken on both sides until golden brown, about 4-5 minutes per side. Remove and set aside. -
Sauté the Vegetables:
In the same skillet, add onions, bell peppers, and diced tomatoes. Cook for 5-7 minutes until softened. -
Simmer the Sauce:
Add chicken stock and vinegar to the skillet. Stir to combine, scraping any brown bits from the bottom of the pan. Simmer for 5 minutes. -
Combine and Cook:
Return the chicken to the skillet, covering it with the sauce and vegetables. Reduce heat to low, cover, and cook for an additional 10-15 minutes, or until the chicken is fully cooked and tender. -
Serve:
Garnish with fresh cilantro and serve hot with rice, potatoes, or a fresh salad.
